Coffee Chia Seed Pudding

So there are numerous articles on the internet about the health benefits of drinking coffee and many more of the health benefits of adding chia seeds to your diet. Chia seeds are the new super-food, they are a great source of fiber and have a whole slew of other health benefits. I decided to put them together for breakfast.

Instructions
  1. Blend coffee, coconut milk, banana, and cocoa powder in a blender.
  2. Place the blended mixture into a container with cover then add chia seeds and stir to combine. Seal the container.
  3. Place in refrigerator overnight
  4. Add your favorite toppings. (sliced banana, nuts, seeds etc)
  5. Enjoy!

Vegan Coffee Ice Cream Recipe

Vegan Coffee Ice Cream
So you want a good desert and if you are vegan or dairy free it's tough to find good ice cream. I made it a point to get my own ice cream maker once I started the paleo diet. I use a Cuisinart and it hasn't failed to give me creamy delicious ice cream.

Now on the matter of sweetener that is still up for debate specifically if honey is vegan or not. I prefer to sweeten with dried dates which I pit, boil and pure.

The coffee I use is of course my father's organic coffee Routine Patrol which adds amazing flavor to this ice cream.

        Ingredients
  • 2 cans coconut milk
  • 1 cup strong coffee
  • sweetener or choice: 3/4 cup sugar or 1/4 cup honey or 1/4 cup date pure
  • 1 tsp vanilla extract
  • 1/3 cup dark chocolate chips

        Method
1. Combine all ingredients (except chocolate chips) in freezer safe bowl
2. Place mixture in the freezer to set for about 30 min (this will make the curing process much faster)
3. Place in  ice cream maker and follow manufacture's instructions (it take mine about 20 min
4. remove from ice cream mixer to a bowl and fold in chocolate chips.
